Rad Thai Basil Salad.
If like me, you have fond memories of the now-retired Sweetgreen menu item, the Rad Thai Salad - try this at home! Bright and flavorful, and you won't have to charge yourself for extra toppings! :)
Ingredients
1 Large Bunch of Kale, Cleaned, Torn, Stems Removed
1 Tbs Olive Oil
1 Handful Thai Basil Leaves
1 English Cucumber, diced
1 Cup Cherry Tomatoes, sliced
1 Cup Red Cabbage, Shredded
1/2 Cup Shredded Carrots
1/2 Cup Chopped Roasted Cashews
Method.
Step 1.
Place your kale in a large bowl. Drizzle with olive oil. Massage the olive oil into the greens until the greens soften and darken in color, about 30 seconds.
Step 2.
Add in your toppings. Drizzle with Spicy Cashew Lime Dressing, top with citrus shrimp and enjoy!
This salad stores nicely in the fridge, and is high in protein so I love it for meal prep!
