Spicy Cashew Lime Dressing.

If you’re like me, you’re a sucker for a good dressing that isn’t the over-played balsamic vinaigrette! I love this dressing because it’s bold, protein-packed, and has Asian flare. Try it with the Rad Thai Basil Salad!

Ingredients

1/2 Cup Cashew Butter (Almond butter or tahini as substitutes, if needed)

Juice of 2 Limes

2 Tbs Rice Wine Vinegar

1 Tbs Chili Garlic Sauce or Sambal, or 2 Tsp Red Pepper Flakes and 1 clove garlic

1 Clove Garlic, minced

2 Tsp Ginger, minced

2 Tsp Onion Powder

3 Tbs Avocado or Grapeseed Oil

1 Tbs Sesame Oil

1 Tbs Honey or Sweetener of Choice (optional but great!)

1 Handful Cilantro

Salt and pepper to taste

Warm water, if needed to thin out the dressing (based on your blender)

 

Method.

 

Step 1.

Place all ingredients, except cilantro, in a food processor or blender!

Step 2.

Depending on the strength of your blender, if things aren’t blending until consistent and smooth, add warm water, and continue to blend. (I have a magic bullet and had to add 1/3 cup warm water, but my food processor leaves things a good consistency)

Step 3.

Add in the cilantro and pulse a few more times. Enjoy over the Thai basil salad with Citrus Marinated Shrimp to recreate the beloved Sweetgreen “Rad Thai”.
