Citrus Marinated Shrimp
I put these shrimp in the Apps category because while they are AMAZING and highlighted as a perfect salad topping (inspired by the shrimp on the Sweetgreen classic, “Rad Thai” Basil Salad), these would also be an awesome alternative to shrimp cocktail! Party goals.
Ingredients.
1 or 2 lbs cleaned, deveined shrimp - tail on (I find that defrosting frozen shrimp always winds up tasting freshest!)
2 Tbs Rice Wine Vinegar
1/4 Cup Avocado Oil
2 Limes
1 Lemon, Zested and Juiced
Salt to taste and pepper
Handful of Cilantro or parsley, chopped
Method.
Step 1.
Heat avocado oil in a pan over medium heat, add minced garlic. Once the garlic becomes fragrant drop in your tail-on shrimp. Sauté for 3 minutes, add salt and the juice of 1/2 lime and continue to sauté until all shrimp are pink and fully cooked, about 3 more minutes. Make sure your heat is low enough that you’re not getting a big sear on the shrimp - once they get crispy they’ll no longer work chilled! (Worst case, serve warm :) ). Turn off heat and allow to cool.
Step 2.
In a large bowl add your lemon zest, remaining lemon and lime juice, vinegar, salt and pepper. Whisk and slowly add in your oil. Drop in your chopped herbs and your marinade is ready!!
Step 3.
Remove the tails from your shrimp, and toss the shrimp with your marinate. Let sit for at least 20 minutes and enjoy!
Step 4.
Again, these would be glorious instead of plain shrimp cocktail or over a salad, like the "Rad Thai" Basil Salad.
