The Best Sweet Potato Fries

With a few simple additions, these sweet potato fries go from simple to simply amazing! Trust me!!!

Ingredients.

2 Sweet Potatoes

1 Cup Cilantro or Parsley, Minced

1 Garlic Clove, Minced

1 Lemon, Zested

2 Tbs Olive Oil + More to roast the sweet potatoes

5 Tbs Chipotle Mayo

Salt and Pepper

Method.

Step 1.

Preheat your oven to 425. While that preheats, clean your sweet potatoes and cut into your fries - I prefer thick steak fries for these and keep the skin on!

Step 2.

Place your sweet potato fries on a lined baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20 minutes, flipping half way, until golden on both sides and fork tender.

Step 3.

While your sweet potato fries roast, it’s time to prepare what makes these fries AMAZING. In a large bowl, add your minced garlic, lemon zest, and minced herb of choice. Drop in your olive oil and stir to combine.

Step 4.

Now the dipping sauce! Juice the lemon you zested and place the juice into a small bowl. Add chipotle mayo and stir until fully combined and it’s a saucy consistency. Add a bit of black pepper and salt to taste, and your sauce is good to go!

Step 5.

Finally drop your roasted fries into the large bowl with your herbs, garlic, etc and toss so the fries are all coated. Now your fries are ready to dip and enjoy!
