Lightened Up Jalapeño Poppers

Jalapeño poppers are creamy, cheesy, and decadent, and these are no different! Instead of being deep fried, they are topped with a crispy coating that will satisfy your cravings without weighing you down! Enjoy!

Ingredients.

8 Jalapeño Peppers

1/2 Cup of Vegan Queso (I like Siete brand or Trader Joe’s Fiesta Dip), or Herb Cream Cheese

1/4 Cup Shredded Vegan Cheddar Cheese

Almond Flour (About 1/4 Cup)

Garlic Powder

Olive Oil Spray (to avoid touching the jalapenos any more than you have to!)

 

Method.

Step 1.

Preheat your oven to 425. While that preheats, in a bowl combine your queso (or cream cheese) and cheddar cheese.

Step 2.

Slice your jalapeños in half, starting from the bottoms so it’s easier to cut the stems in half as well (if you miss a few, not the end of the world, they’re just easier to hold in the end this way!).

Step 3.

Line a baking sheet with parchment or foil. Spray with olive oil or avocado oil spray. Add your halved jalapeños and spray again so all jalapeños are coated in olive oil. Fill the peppers with your mixture and bake for 15 minutes.

Step 4.

Remove the peppers from the oven. Sprinkle the top of each pepper with almond flour and garlic powder, spray with more olive oil spray and broil for an additional 3 minutes until the topping is golden brown.

Step 5.

Allow to cool for a few minutes before transferring to your serving dish. Enjoy!
