Vegan McRib

Ever since the McRib came back, I have been craving one! While I no longer eat meat, I have fond memories of the McRib as a kid. And as someone who remembers every meal she’s ever eaten - I was determined to recreate a vegan version! The directions are a little unconventional on this, but trust the process. The end result - a McRib that even my meat-eating parents loved!

Ingredients.

1 Package Silken Tofu

1 Cup BBQ Sauce, I like Sweet Baby Ray’s Original for this (+ More for basting)

1 Italian Deli Roll

Pickles

A few slices of red onion

1 Tbs Vegan Butter (optional)

 

Method.

Step 1.

Remove Silken Tofu from the packaging, and place in a freezer bag or Tupperware. Freeze overnight. Remove from freezer and place in the fridge to thaw. This process releases a ton of moisture from the tofu, so make sure that bag is sealed tight!

Step 2.

Once your silken tofu is thawed, drain out any excess moisture, add your BBQ sauce and leave to marinate for at least 30 minutes (overnight for best results).

Step 3.

Preheat your oven to 400, and bake your tofu for 40 minutes, flipping and basting with a bit more BBQ sauce halfway.

Step 4.

Toast your roll, I like drizzling mine with vegan butter before toasting for more flavor.

Step 5.

Rinse your onion under water to take some of the intensity out of the raw onion flavor.

Step 6.

Assemble and enjoy! Slice your tofu piece in half so it fits across your roll, then add your pickles and onions and prepare to be thrown back in time! My whole family was blown away by this one, I hope yours is too!
