(Gluten Free/ Paleo) Shrimp Tacos
I love a fried shrimp taco, but rarely order them because fried food makes me feel not so amazing. I created these the first time I tried Whole 30, when I was craving fried food. Not only did they do the trick - but I like them more than the real deal! I make extra shrimp to throw on a salad for lunch the next day!
Ingredients.
1 2 Pound Bag of Deveined Shrimp, Cleaned, Thawed, Tails removed
2 Cups Almond Flour
1 Egg
Seasoning: Salt, Pepper, Chili Powder, Cayenne (optional), garlic powder
Tortillas - I love Siete Almond Flour Tortillas
Chipotle Mayo - I like adding the seasoning I add to my shrimp to a bowl with Primal Kitchen Chipotle Lime Mayo
Taco Toppings of your choosing!
I like mango salsa on these (I’ll post that recipe soon!) but a squeeze of lime, some cilantro,and slice of avocado would also be simple and delish!
Method.
Step 1.
In a bowl, combine almond flour with your seasoning. (While the seasonings are out, I also add a bit of that seasoning to the shrimp itself, and in a small bowl to be combined with mayo, for a chipotle mayo.)
Step 2.
In a separate bowl, whisk you egg with a drop of unsweetened almond milk. Pour the egg mixture into your shrimp and mix so all shrimp are well coated in egg.
Step 3.
Carefully transfer a few coated shrimp at a time into the bowl of flour and toss to coat. Transfer coated shrimp to a plate.
Step 4.
In a large pan, heat 3 tbs of olive oil over medium-high heat until the oil comes to temperature. Carefully place your shrimp in the oil, making sure none are overlapping. (I usually make a big batch and use two large pans). Sear for 3 minutes on each side until the shrimp are pink and the outer coating is nice and crispy. .
Step 5.
Heat your tortillas over an open flame of in a pan until nice and charred on both sides. I like siete almond flour tortillas!
Step 6.
Assemble your tacos and enjoy! I start with a layer of chipotle mayo, then add about 3 large shrimp, and top with mango salsa and guac, but simple with cilantro, a slice of avocado, and lime juice is also amazing!
