10 Minute Tomato Soup

This recipe starts with a regular can of tomato soup, and quickly transforms it into something that tastes like it's been cooking for hours! Just a few easy ingredients and a few minutes to make this dreamy tomato soup - like a hug in a bowl!

Ingredients.

1 Can of Tomato Soup (I like Amy’s brand)

1/4 Onion, minced

2 Cloves Garlic, sliced

3 Tbs Butter (I use Miyoko’s Vegan butter in here)

1 Tsp Red Pepper Flakes (optional)

 

Method.

Step 1.

Melt your butter in a pan. Once melted, drop in your sliced garlic and swirl until fragrant. Drop in you onions, stirring occasionally until translucent. Add in your chili flakes and let everything continue to cook. Bits may start to stick to the pan, but they’ll release once you add in the tomato soup!

Step 2.

Once your onions are soft and almost caramelized (about 10 minutes) drop in your soup and stir, scraping anything that stuck to the bottom of the pan, to release that flavor. Cook until your soup is heated through.

Step 3.

Enjoy! I like serving mine with crusty bread, toasted and drizzled with olive oil.
