Loaded Fingerling Potato Pizza

This may sound like an unexpected pizza topping, but this pie is much more than a pizza - it tastes like the perfectly loaded baked potato! The tang of the sour cream and fresh bite of the scallions cut through the creamy potatoes that are infused with flavors of rosemary and garlic. You have to try it to understand how crazy good it really is!

Ingredients.

1 Pizza Crust of Choice (I’ve also made this on a frozen Banza crust, and a cauliflower crust and they both turned out great!

2 Cups of Fingerling Potatoes (About 5 small), thinly sliced

5 Sprigs of Rosemary

5 Garlic Cloves, Peeled and smashed with the back of your knife

3 Tbs Olive Oil

~ 1/2 Cup of Sour Cream (enough to leave a nice layer on the bottom of your crust, leaving room around the edges), + More to dollop on top

3 Scallions, Sliced

1/4 Cup of Shredded Parmesan

1/2 Cup of Shredded Mozzarella

Method.

Step 1.

Preheat oven to your crusts instructions. I like to put my pan into the oven while it preheats, to make sure the bottom of the crust crisps up.

Step 2.

In a large cold pan add in your olive oil, rosemary, and smashed garlic cloves. Turn the heat to medium-high. As the oil heats up, the rosemary and garlic will start infusing their flavor into the oil. Once the oil is hot, the garlic and rosemary are softened and everything is super fragrant, your oil is infused!

Step 3.

Push your rosemary springs and garlic aside in the pan, and drop in your potatoes so as many as possible are making contact with the bottom of the pan. Season with salt and cook your potatoes for about 5 minutes on each side, until the potatoes are golden and fork tender in the center.

Step 4.

Place your crust down, and spread on a thick layer of sour cream like you would spread on pizza sauce. Then layer on your potatoes. Next the parmesan and mozzarella cheese. Cook to your crusts instructions, until the crust is cooked through and crispy and the cheese is melted.

Step 5.

Sprinkle half of your scallions over the entire top of the pizza. Now add some dollops of sour cream over the top of the pizza - this is the cool refreshing bite that’s so good on a hot baked potato! Finally, sprinkle the rest of our scallions for garnish.
