Mexican Goddess Salad.

The Mexican Goddess Dressing deserves a delicious salad to be poured on. This kale salad is the perfect match, because it highlights those bright Mexican/ Coastal California flavors, with a hearty green that can hold it’s own! The hearts of palm are really the star, creamy, briny and hearty - they’re the perfect match for this salad and dressing!

Ingredients

1 Large Bunch of Kale, Cleaned, Torn, Stems Removed

1 Tbs Olive Oil

1 Ripe Avocado, Diced

1 Can Black Beans, Drained

1 Can Hearts of Palm, Drained and Roughly Chopped

1 Jalapeno, Diced, Seeds Removed

1/4 Cup Pickled Chiles, chopped (optional)

Any other toppings you like! I like Sliced Cherry Tomatoes and Cucumbers in here too! Crushed up tortilla chips would be great in place of croutons!

 

Method.

 

Step 1.

Place your kale in a large bowl. Drizzle with olive oil. Massage the olive oil into the greens until the greens soften and darken in color, about 30 seconds.

Step 2.

Add in your toppings. Drizzle with Mexican Goddess Dressing, and enjoy!

This salad stores nicely in the fridge, and is high in protein so I love it for meal prep!
