Creamy Mexican Goddess Dressing.
If you’ve ever tried CHOPT in New York, you know that all of their dressings are AMAZING. Their Mexican Goddess is my personal favorite. After much trial and error, I was able to recreate my ideal Mexican Goddess. I think you’re going to love it!
Ingredients
1 Ripe Avocado
1/2 Jalapeno, Seeds Removed
1 4 oz. Can Diced Green Chiles
1 Handful of Cilantro (Arugula if you hate cilantro)
1 Clove Garlic, minced
Juice of 2 Limes
Salt and pepper to taste
Apple Cider Vinegar, if needed
Method.
Step 1.
Place all ingredients in a food processor or blender!
Step 2.
Depending on the strength of your blender, if things aren’t blending until consistent and smooth, add apple cider vinegar, and continue to blend.
Step 3.
Enjoy this perfectly creamy dressing with my Kale-foria Mexican Salad.
This dressing stores nicely in the fridge! Just be sure to use perfectly ripe avocados (over-ripe will taste over-ripe in the fridge, and under-ripe won’t get as creamy)
