Stuffed Peppadew Peppers

Peppadew peppers are bright, sweet, have a surprising crunch - one bite and you’ll be hooked! Amazing on a sandwich (marinating juices and all), but here they’re really the star. You can stuff these with Herbed Goat Cheese, but I use vegan cream cheese as a vegan app everyone can enjoy!

Ingredients.

1 Package Plain Cream Cheese (I like Tofutti Vegan Cream Cheese)

1 Tbs Italian Seasoning

1/2 Tbs Garlic Powder

Salt and Pepper to taste

1 Jar Peppadew® Peppers (SWEET PIQUANTÉ) 

Method.

Step 1.

Let your cream cheese soften at room temperature. Add your spiced and mix until combined.

Step 2.

Remove a Peppadew from the jar. If there are any seeds still in there discard them. Take a small spoon and scoop out some herbed cream cheese. Press your cream cheese into the pepper. You should be able to continue pressing to fit more cream cheese in there, until the pepper is filled. Repeat this until you’re out of peppers!

Step 3.

Store these in the fridge until ready to serve. If storing overnight, include a little of the jar’s marinating liquid at the bottom of your dish so the peppers stay fresh.

Step 4.

Enjoy!
