Moms 7 Layer Dip - THE Party Essential

It’s not a family party, and certainly not a SuperBowl Sunday, without this 7 Layer Dip. Tried and true throughout the years - I think it’s safe to say that this is a must!

Ingredients.

1/4 Onion, Minced

1 16oz Can Refried Beans (double check that they’re vegetarian if making for a veg!)

1 container of sour cream, I used Tofutti vegan but regular sour cream also works

1 Package of Taco Seasoning, Low Sodium if available

1 4oz Can of Diced Chiles (Hatch Brand preferred)

1 Package Shredded Cheddar or Mexican Cheese Blend (I used vegan cheddar in this video)

1 2.5 oz can of sliced black olives

2 Vine Ripe tomatoes, seeds removed, diced

+ Tortilla Chips for Dipping

 

Method.

Step 1/ Layer 1.

Pre-heat oven to 375. Spray a small baking dish with olive oil spray or wipe with crisco. Add your onions down first as layer 1.

Layer 2.

For layer 2, then spread down your refried beans in an even layer, edge to edge.

Layer 3.

Mix your sour cream and taco seasoning in a bowl. Spread about 1 cup of the mixture over top of the beans so there is a nice thick even layer. The rest is great on its own as a separate dip, I usually use it as the crudité dip too!

Layer 4.

Add your canned chiles (canned diced jalapenos could also work). Rake them with a fork so they cover everything edge to edge, and you can have a little bit on every bite.

Layer 5.

Layer on the cheese!

Layer 6.

Sliced black olives down!

Layer 7.

Diced tomatoes, seeds and guts removed so this layer doesn’t make things watery! Now we’re ready to pop in the oven.

Bake until the cheese is melted and everything is hot, about 25 minutes and ENJOY! Serve with tortilla chips, and please don’t burn your mouth eating it straight out of the oven. :)
