Fresh and Easy Bruschetta

This bruschetta is absolutely perfect in my opinion! It’s fresh, bright, and has a subtle sweetness that always receives rave reviews from friends and family. Cherry tomatoes seem like a pain to slice, but watch the video below for an easy hack on how to slice them in half the time!

Ingredients.

3 Cups Cherry Tomatoes

1/4 Onion, Minced

1/2 Cup Basil, Chopped or Chiffonade

1 Large Clove of Garlic

1 Tbs Olive Oil

1 Tbs Balsamic Vinegar

1 Tbs Date Syrup, plus more to drizzle on top before serving

Salt and Pepper to taste

 

Method.

Step 1.

Slice your cherry tomatoes in half. (I like to place them in small batches below a clear tupperware lid, press firmly so none can run away, and slide my knife between the tupperware lid and the cutting board to slice a bunch of tomatoes at once! Video above! You can also just simply slice them one-by-one but this is such a time saver!) Add your sliced tomatoes to a bowl with the onion and basil.

Step 2.

In a small bowl add your remaining ingredients and whisk them together. Pour that mixture over the tomatoes and stir so everything is coated in your marinade.

Step 3.

Allow the tomatoes to marinate for a bit for the best flavor! I like serving mine with a bit more date syrup drizzled over top to make everything look glossy and beautiful. (Plus it tastes great!)

Step 4.

Enjoy with crostini (bonus points if you rub them with garlic), pita chips, or however you like it! I love putting any leftovers on top of avocado toast or my basil white bean dip!
