Caramelized Crab Omelet!

Let’s start this off by admitting that for some reason me and Mike call this “the omelet”, but it always has been and always will be scrambled egg form! This could easily actually be an omelet though, follow your truth!

I’ve mentioned this before but this is actually the first thing I ever cooked for my now boyfriend of 5 years, Boyfriend Mike! While the combination might sound unusual, the sweetness of the crab and tanginess of the goat cheese are a really beautiful pair. Don’t knock it till you’ve tried it!

Ingredients. (per 1 “omelet”)

1/4 onion, minced

3 Sticks about 1 Cup of Imitation Crab Meat or Crab legs, Chopped Into Large Chunks

1 Handful of Chopped Baby Spinach

3 Eggs

A Few Dollops of Herbed Goat Cheese

1 Tbs Olive Oil

1 Tbs Butter

Garlic Powder, Salt, and Pepper

Method.

  1. In a sauté pan add about 1 tbs of olive oil, and your onion. Cook until the onions are translucent, and start to brown, about 4 minutes. Drop in your crab and 1 tbs of butter. Season with garlic powder, sauté the crab so everything gets incorporated, and then leave it undisturbed for a minute so the edges can caramelize. Add in your spinach season with salt and pepper, and sauté once more until the spinach is wilted.

  2. If your pan looks dry, add in another splash of olive oil. Whisk your eggs, season with salt and pepper and drop them into your pan.

  3. Gently scramble your eggs (or form into an omelet).

  4. When the eggs still look a bit wet, but almost ready, turn off the heat, add in your dollops of goat cheese (or if this is an omelet place the goat cheese in the center before rolling), and allow the residual heat to finish cooking the eggs and soften the cheese.

  5. Prepare to fall in love, and enjoy!
