The Ultimate Breakfast Bowl!
While mango salsa and eggs may sound like an unlikely pairing, when combined with black beans and jasmine rice they are a match made in heaven! I love serving this with a side chipotle mayo. You can also make your eggs however you like them, but these omelet like bites are my favorite method in this bowl.

Ingredients.
3 Eggs Whisked
1 Scallion, sliced
Salt, pepper, and chili flakes and garlic powder to taste
3 tbs pico de gallo
1/2 avocado, cubed
1 Cup Jasmine rice, cooked to instructions
1/4 Cup Black Beans
Chipotle Mayo for serving (optional)
Method.
In a pan heat up 1 tbs of olive oil. Drop in your scallions, season with salt, pepper, chili flakes and garlic powder and sauté for one minute. Season your eggs with a bit more salt and pepper, and drop them in. Cook for about 2 minutes, swirling your spatula in the center, and pushing the edged toward the center to form an evenly cooked layer of egg (like an omelet you aren’t folding!)
Transfer your scallion and egg omelet onto a cutting board, and cut into cubes.
Assemble your bowl! I like starting with rice, then the black beans, and 1/2 of your Pico De Gallo. Then I add the eggs, avocado, mango salsa, and finally top with a bit more pico.
Serve with chipotle mayo and enjoy!
