VEGAN FETA! (Made with Tofu)

While this clearly isn’t a salad, I’m putting this in the salad category because adding this to literally any salad is a game changer! This truly tastes like a perfect fresh feta (that fancy kind in the brine). This “feta” can be stored for up to a week, just be sure to transfer your feta cubes to a fresh container, removing it from the marinade after about 24 hours, for best results. Enjoy!!! PS: I love this feta in this kale and apple salad, perfect for fall!

Ingredients

  • 1 package of extra firm tofu (14oz)

  • 2 tbsp white miso

  • Juice of 1 small lemon

  • 1/4 cup apple cider vinegar

  • 3 tbsp water

  • 1 tbsp olive oil

  • 2 tbsp nutritional yeast

  • 1 tsp garlic powder

  • 1 and 1/2 tsp salt

  • fresh cracked black pepper

  • 1/2 tsp red pepper flakes (optional)

Method.

 

Step 1.

Remove your extra firm tofu from the packaging, wrap in a clean kitchen towel or paper towels and stack something heavy on top. Press for at least 30 minutes.

Step 2.

Place all marinade ingredients into a medium bowl and whisk to combine.

Step 3.

Cut your pressed tofu into cubes to resemble feta. You can do this by crumbling the tofu block, dicing it, or my personal favorite method: cut your tofu into 1/2 inch planks, cut each plank in half width-wise so you have thin strips, then break off chunks to resemble real feta cubes. Step 4.

Place your tofu cubes into a shallow Tupperware container. Pour your marinade over top and seal. Allow to marinate overnight, ideally for 24 hours and up to 48 hours.

Step 5.

After the 24 hour mark, remove your “feta” from the marinade, and transfer it into a fresh sealable container. This will last for up to a week!

Step 6.

Add your feta anywhere you would add normal feta! I love this in this kale and apple salad. Enjoy!!!
