Roasted Red Pepper Dressing

This dressing was inspired by my favorite sandwich shop in NJ, Annabella’s House of Mozzarella.

They slather a roasted red pepper aioli onto sandwiches and salads, and there can never be too much. When I left NJ I was left craving that creamy dressing so I decided to recreate it! I’ll still go back to Annabella’s but this definitely fits the bill! Creamy and bold, slightly tangy - make your own sammy or salad to match its greatness!

(Think a sandwich with fresh mozz, RRPs, and fried eggplant, or a salad with RRPs, artichokes and provolone!)

Ingredients

1-2 Cloves Garlic, Minced

3 Tbs Cup Rice Vinegar

3 Tbs Mayo of choice

1 Large Roasted Red Pepper, any remaining seeds or burnt skins removed.

3 Tbs Fresh Basil

Salt and Pepper to taste

 

Method.

 

Step 1.

Combine all ingredients in a blender or food processor. THAT’S IT! Slather it on a sandwich or drizzle it over a salad and enjoy the bright and creamy deliciousness! I like storing any leftover in my now empty roasted red pepper jar!
