My TikTok Famous Cucumbers!
This cucumber salad went viral for good reason! It’s so addictive, bold, and refreshing! If you can’t find Persian cucumbers, you can also use mini cucumbers or English cucumbers, but Persian cucumbers have their own unique flavor that really brightens up the dish!
Ingredients
8 Persian Cucumbers
3 Tbs Creamy Peanut Butter
2 Tbs Seasoned Rice Wine Vinegar (Or unseasoned + 1 tsp of sugar and a pinch of salt)
2 Tbs Low Sodium Soy Sauce
1 Clove Garlic, minced
1 Tsp Chili Flakes
1 Handful of Cilantro (Mint or Basil if you hate cilantro)
1 Handful of Roasted Peanuts (peanuts ideal, but cashews or almonds could work instead if that’s what you have on hand instead)
Method.
Step 1.
Cut your cucumbers into planks. Place in a strainer over a bowl and salt your cucumbers. This will wick some of the bitterness out!
Step 2.
Mince one garlic clove (seriously just one) and place into a large bowl. Add your PB, seasoned rice wine vinegar, and soy sauce, chili flakes, and whisk until smooth and creamy.
Step 3.
Pat your cucumbers dry (also to remove excess salt), drop your cucumbers into the dressing and stir to coat the cucumbers.
Step 4.
Garnish with cilantro and toasted peanuts and enjoy! While this is the garnish, I wouldn’t omit it - it adds so much depth and flavor! Substitute suggestions above if needed!
This one doesn’t keep very well, but don’t worry - you won’t be able to stop eating them! We never have leftovers.
