My Family’s Latkes
Latkes are a labor of love. My family only makes them once a year, for Hanukkah, and it fills the house with warmth and holiday cheer. When you try these I hope you can taste the love. Enjoy!
Ingredients.
12 Russet Potatoes, Scrubbed clean
3 Onions
1 Cup of Flour, + more if needed to soak up excess moisture
2 Whisked Eggs
2 Tsp Baking Powder
3 Tbs Garlic Powder
Salt to taste (probably more than you think!)
Canola Oil for frying
Apple Sauce or Sour Cream
Method.
Step 1.
With a box grater, grate your potatoes and onions, squeezing out the excess liquid as you go, before adding them to a large bowl.
Step 2.
To your large bowl with potatoes and onions, add your baking powder, garlic powder, eggs, and salt.
Step 3.
Slowly add in your flour, stirring to combine. There should still be moisture in the mixture but it shouldn’t be soupy. If it still seems soupy, gradually add in a bit more flour.
Step 4.
Heat your canola oil in a fryer over medium heat. Once the oil is hot, take a scoop of your mixture, form it into a patty, and drop it in the mixture. Always just do one test latke. From here you can see if the oil is hot enough. Cook that latke until golden brown and crispy on both sided. Remove from the oil onto a plate lined with paper towels. Give it a taste to make sure you’ve used enough salt and everything is good to go!
Step 5.
Once you’ve made your test latke and you know everything is good - let it rip! Fry up your latkes, transfer them to a plate lined with paper towels to absorb any excess oil. Season with salt and enjoy! My family serves their latkes with apple sauce, but I also love these with sour cream and roe like at my beloved Russ and Daughters.
