My Family’s Passover Cake - The Unsung Hero of My Childhood
This cake is MOIST (there’s no way around that word). Only as an adult did I realize that this once-a-year cake was truly my favorite cake of all time. Filled with a creamy center, pops of chocolate, and memories dating back to before I was born.
Now this is my birthday cake of choice, and not only is it creamy and delicious, but it takes me back to memories of being at the kids table with my cousins: a stretch of foldable tables placed in the hallway of my childhood home while the adults sat at the dining room table. We drank white grape juice and counted down the seconds until dessert. Now our grape juice has been upgraded to wine, but the dessert remains the highlight.

The Cake
Ingredients
6 Eggs, Separated
1 1/2 C Sugar
2 red apples, peeled and grated (ideally gala)
4 oz Mini Semisweet Chocolate Chips
1/2 C Matzo Cake Meal (Could also use Matzo Meal, but it’s less fine and won’t yield as creamy of a cake - maybe blitz it up in a blender for a second before use)
Method.
Step 1
Preheat your oven to 350. Beat yolks with sugar until lemon colored and thick.
Step 2
Gently fold in the apples, then slowly add the matzo meal in batches so there are no dry patches, and finally the chocolate chips.
Step 3
Beat the egg whites until soft peaks form - stiff but not dry. Gently fold in the yolk mixture.
Step 4
Grease a springform pan, pour the mixture into the pan, and bake at 350 for 40-45 minutes until it springs back. Allow the cake to cool for at least 30 minutes before topping with chocolate glaze. (If your cake sinks, it’s okay - we’ll be covering it with a thick and beautiful Passover Chocolate Glaze!)
The Passover Chocolate Glaze
Ingredients
2 Tbs Butter
3 Tbs Honey
1/4C Water
6 Oz Semi Sweet Chocolate (grated, or mini chocolate chips)
Method.
Step 1
Combine butter, honey, and water in a cold saucepan. Turn on the heat and stir frequently until everything is blended together and the mixture has been brought to a boil.
Step 2
Once the mixture has been brought to a boil, remove the saucepan from the heat, add in your chocolate, and stir constantly until the chocolate is melted and a creamy chocolate sauce is formed.
Step 3
Allow your chocolate mixture to cool for at least 5 minutes, allowing it to thicken. Then drizzle it over the cake and allow the cake to cool in the fridge until the chocolate is set and fudgy. Enjoy!
